Recipe: Vegetable Pizza

When I started to diet, I resigned myself to the fact that I would never eat pizza again. Then I found this recipe. And believe me when I say that if you’ve gone a month without pizza like I did, this’ll be the best pizza you’ve ever tasted!

Serves 2
Ingredients:
1 Pizza Base (approx. 300g) or make your own
3 heaped tbs tomato puree
1 red pepper
6 mushrooms
2 tbs sweetcorn
1 pinch dried oregano
1 pinch dried basil
50g mozzarella cheese
1 serving of mixed leaf salad
1 tbs olive oil & balsamic vinegar dressing
1 tbs mixed seeds
1 tomato
Method:
Preheat the oven to 220 degrees C.
Put the pizza base on a non-stick baking tray and spread over your tomato puree. Sprinkle with the dried herbs. Then add the grated cheese, and chopped vegetables.
Bake for approx. 12 minutes, or as per packet instructions for the pizza base.
Whilst pizza is cooking, wash and chop your mixed leaves (I use round lettuce, little gem and rocket). Dress them with a low fat dressing of your choice (I make mine in advance – 2 parts olive oil to 1 part balsamic vinegar, with a little salt and pepper to season). Then sprinkle over your mixed seeds, and add a chopped tomato.
Serve half the pizza per person, with the tossed salad.
And I can vouch for the fact that it still tastes great a year later!
